THE CONTENT OF PHENOLIC COMPOUNDS AND THE ANTIOXIDANT ACTIVITY OF SOME TYPES OF NUTS CONSUMED IN FOOD

Phenolic compounds, flavonoids, anti-radical activity, and restorative power are found in walnuts, pecans, almonds, hazelnuts, cashews, macadamia, peanuts. The highest content of phenolic substances the studied nuts was walnuts (536.6 mg gallic acid per 100 g dry matter), pistachios (512.9 matter) pecans (377.6 matter). Wild hazel contains 1.4 times more compared to hazelnuts 4.2 flavonoids. In this work, a method used determine concentration extract at which 50% free radical is bound by 2,2’-diphenyl-1-picrylhydrazyl (DPPH) radical. antioxidant activity only pistachios, hazelnuts. No antiradical detected remaining extracts. all extracts mainly, small extent. Of extracts, peanut pistachio showed greatest restoring power. Hazelnut pecan also exhibit greater than other studied.
